Hand-forged Santoku. A Japanese chef’s knife with a blade length of 18.5 cm from the Eden Susumi collection. Eden Kanso Susumi knives are thin and razor-sharp. The SG2 powder steel is stainless and, with a hardness of 62-63 HRC, rock-solid. Next to that the side of the steel is also considerably harder than is common for damascus steel. This means that the side of the knife is much better protected from scratches.
